Do you ever wonder how other parents get their kids to eat their fruits and vegetables?  They copy what they see around them. My parents raised my brother and I to always try what was on the table.  We didn't have to like it but we had to try it.  I will have to admit I didn't always like that my mom made me try things but as a parent I appreciate it even more.  We don't cook different meals for our kids - they have to eat what we are cooking.  Sometimes that means salmon, veggie pizza, and other random goodies! Square One (Pumpkin) Mac-n-Cheese Recipe

A few weeks ago I shared a recipe that I spiked with Square One frozen organic baby food, Healthier for you Potato and Ham Soup.  Wednesday nights at our house (OK - every night) is hectic with trying to figure out what's for dinner.  Each Wednesday we attend a small life-group at our local church but it starts at dinner time.  The adults do potluck style and eat together but we normally feed the kids before we come.  Anyways - that leaves me finding something QUICK to fix the kids before we leave.  If your pantry looks like mine I'm sure you have those 'emergency' boxes of mac-n-cheese for busy nights like tonight.  I've really been trying harder this year to make an effort to make dinner more healthy for all of us but especially for the kids.  Want to know how I made a box of mac-n-cheese healthier with baby food?   My recipe for Vegged Up Mac-N-Cheese: 1. Grocery Store Observation

I just returned from a trip to the local grocery store.  I just had to pick up a few things and I made an observation while selecting my cherry tomatoes.  Normally, I look at the organic veggies first to compare the price.  If they are close I choose the organic.  However, when I looked at the organic tomatoes I noticed they came from Mexico.  When I got to the non-organic tomatoes...guess what?  They were local!!!  To me I would prefer to buy locally and luckily living in Florida the grocery stores stock the local fruits and veggies when they are in season.  Not only could I have gotten fresh Florida strawberries but also the tomatoes!  The grocery stores are getting smart; they advertise heavily on the local fruits and veggies now.  So...EcoChic lesson of the the labels, you never know what you might learn.  ...
