Avocado, Lime, Banana, Coconut Yogurt Push Pops

Last week while shopping we found these adorable push pop molds and for $1.99 I couldn’t resist.  They sat hidden below the sink for a week until I decided what to put in them.  As I mentioned in my Avocado, Lime, Banana Smoothie recipe, I have a love affair with all things avocado!

Avocado Lime Banana Push Pops

We decided to spike the recipe we used yesterday with some shredded coconut for a little texture.  While I bought a bag of shredded coconut for this recipe; my daughter actually convinced me to buy a real coconut for her.  Have you ever tried to crack a coconut?  It’s not as easy as it looks but thanks to a video I found on YouTube I learned a trick.  After I attempted and only got a drop or two of coconut milk, my husband proceeded to crack it open using a hammer just like in the video.  (How to crack open a coconut video)  We had fun showing her what was inside, sipping the milk, and munching on the meat.  Well worth the $2.00 I spent to show her where stuff comes from.

Back to the push pops!  All you need is a blender, 1 avocado, 1 banana, juice from 1 lime, Stonyfield yogurt (vanilla), some unsweetened coconut, and your push pops.  Don’t forget to have you kids help prep the food; they absolutely love using the blender too.

A frozen treat for the entire family featuring avocado, lime, banana, and coconut blended with organic yogurt.
  • 1 ripe avocado
  • 1 banana
  • Juice from 1 lime
  • Handful of unsweetened coconut flakes
  • 16 oz of Stonyfield Vanilla yogurt
  1. Add meat of avocado to blender.
  2. Add banana to blender.
  3. Squeeze the juice from one fresh lime in blender.
  4. Add 16 oz. of vanilla yogurt to blender.
  5. Blend on high until the ingredients are fully blended and smooth.
  6. Pour mixture in push pop molds and freeze.
  7. Freeze for 4-6 hours until hard.

After dinner (and a lot of begging) I pulled the barely frozen push pops out of the freezer for dessert.  Ideally they should freeze overnight or for at least 4-6 hours until they are good and frozen.  My 5 yr old had push pop fail and ended up eating it from a bowl with a spoon but my son and I were a little more successful.  These push pops were so refreshing and the lime was perfect!  You can barely taste the avocado at all; it really just adds the color and texture to the push pops.  The coconut was a fun addition that we actually added at the last minute directly into the push pops.  I wonder what we’ll put in the push pops tomorrow?

Updated: You can see below in the picture my daughter loves both the push pops and her avocados!  Yes, she ate the avocado right from the skin.  She mastered the push pop today too!!
